Black Pepper

 

The scientific name - Piper nigrum


Black pepper, is a type of vine that bears the fruit of the genus Pepper. The seeds of the pepper pods grown on the mango vine are dried and used as a spice. Pepper is also used in traditional Ayurvedic medicine to flavor food. A widely traded spice in the world.


History

Black pepper is native to South Asia and Southeast Asia. Since history, India has been at the forefront of pepper cultivation as well as exports, and Sri Lanka is the second largest exporter of pepper. Pepper is also known as 'black gold' and is a highly valued spice.


 Varieties of pepper


 
Due to the different preparation of the green seeds from the pepper pods, several varieties are found in pepper. The seeds are of different colors and are available in the market as black, green and white. Although the uses are the same, the market value of pepper varies due to classification.    

 

    Black pepper                                   

   
 Black pepper, often called "the king of spices," comes from the berries of the *Piper nigrum* plant. It has a rich history, originating in India and Southeast Asia. Known for its strong, pungent flavor, black pepper is a versatile ingredient used in various cuisines around the world. It enhances the taste of meats, vegetables, and even desserts.

Beyond its culinary uses, black pepper may offer health benefits, such as antioxidant properties and improved digestion. Whether used whole, cracked, or ground, it remains a beloved staple in kitchens globally.


 White Pepper 

White pepper is made by soaking well-ripened pepper pods in water for about a week, removing the soft thin covering and then drying them. The outer covering of the seed is removed by mechanical, chemical or biological methods. White pepper is highly valued in the wild marketIt is widely used to flavor foreign foods, especially Chinese, Thai and Portuguese.

 

Red Pepper


 
Red peppers are peppers that are picked after the pods are fully ripe. Picking these should be done very delicately. The green color is less than black pepper.  Ripe red pepper pods can also be used to make green pepper and dried.

  Pink Pepper


    Pink pepper is the fruit of the Peruvian pepper tree or Brazilian pepper tree. Found as a dry berry. Pink pepper is not common and is imported from Madagascar. They are spicy and slightly sweet in taste. It is high in value. Although it is not known commercially, it got its name as pink pepper because of its resemblance to pepper seeds and its taste.

 

  •    Green Pepper                                                

Green peppers, are unripe sweet peppers with a slightly bitter taste. They're low in calories and high in vitamins C and A. Commonly used in salads, stir-fries, and stuffed dishes, they add crunch and flavor. They grow well in warm, sunny conditions and can be stored in the fridge for about a week. Overall, they’re a nutritious and versatile addition to many meals.
                                                                                                                                                 

Uses

Culinary : Adds heat and flavor; used in seasoning, spice blends, and food preservation.

Medicinal : Aids digestion, reduces inflammation, and treats respiratory issues.

Industrial : Used in essential oils, skincare products, and as a natural insect repellent.

Plantation

  Cultivation Although pepper can be grown in a very dry
climate, it grows easily in well-drained, fertile soil with moisture and sunlight. Plants are propagated by cuttings of the pepper vine. Maintenance is very important in cultivation. The pepper vine grows high by providing the necessary nutrition to the plant using financial soil fertilizer. The pepper vine is about 4m tall along a support. After the pepper harvest, the branches of the supporting trees should be cut and removed twice or thrice a year to expose the vines to the sun. These branches can be used as organic fertilizers.

Economic value of pepper   

 

A crop of economic importance for tropical nations like Vietnam, India, and Sri Lanka is black pepper. It is a significant export crop that generates revenue for smallholder farmers and jobs along the supply chain. Market competition, pests, and climate change, however, pose problems for the pepper industry. Value-added products and sustainable techniques present growth prospects in response to the growing global demand, assisting in maintaining stability in this significant agricultural industry.
